Can I exclude certain fields from the 'Copy Transaction' process?

I have a number of custom fields, both at line level and transaction level.

Is there any way to flag these fields so they are not copied when a user uses the Copy Transaction process?

Or can I create a workflow that will only trigger as part of the 'copy' process to remove them?
