Default ship to address for shipping method

We allow customers to pick up order at our warehouse. I have created a shipping method (ShipVia) named pick up.

I would like to update the ship to address to our warehouse address anytime this method is selected on an order.

I have not been able to find anything in suite answers on this topic. Has anyone already addressed this use case?
