Field in dataset not showing in pivot table

I am trying to create a pivot table with fields from the dataset.  A couple of the fields that are available and displayed in the dataset are not available as fields in the workbook/pivot table.  Does anyone know why this could be?  Are not all dataset fields available in the workbook?
