Create Inventory Count - How do I Assign Items to be available to Count?

I've been trying to learn to setup an inventory count or cycle count for our warehouses, but when I get to creating the count no items are appearing as they are not due to be counted in the selected date range.

How do I add items to be counted at an interval?

Unfortunately most of the tutorials seem to overlook this step and have it already set up. If you could link me to one where it does cover this that'd be greatly appreciated.

Am I supposed to customize what fields the sub list should show?
