Set Field Display Label (Save after Record Submit)

Hey,

I have a simple workflow that changes the display label of a field from its original label (call it "test label 1") to a new value (call it "check cable") in an assembly build. Its triggered when you select a particular assembly.

However, upon saving the record, the label returns to "test label 1". Any ideas on how to retain the new value "check cable" once saved?
