How do I get vendor's fax number onto payment voucher

fax number on vendor's payment voucher would be helpfull as I do not use many cheques - mostly direct bank payments (BACS in the UK)

I tried to ammend the Setup > Transactions > Custom PDF Layouts >  but can not find anywhere to add fields. also tired Transaction Forms and Transaction Body Fields but no luck.
