Email address - Web Order - Sales Order

Can someone help us out?  Prior to the release of 11, the email address always displayed in the sales order we received directly from the web store.  In Version 11, that feature was discontinued.  Now we have to access customer record, cut and paste, a lot of wasted steps.  We need email to advise customer when order has shipped.

Any suggestions would be welcome.
