Logging Phone Calls from Opportunity Form

Hi,

The way NS is currently setup, when you log an activity on an Opportunity form, you are only given the choice to select a contact from the company which is associated to the opportunity. Our sales process is very long and complex and there are many different people/companies that are involved in the sale. We would like to have the option of logging an activity with a contact/company other than the customer on the opportunity form. Is there a way around this?
