Mass Update Fields - making fields available

Q1: How do you get an item field to be open to mass updates?  Some of ours are and some aren't.  Very grustrating.

Q2: We have 160 custom item fields.  Mass updates seem to only list the first 40 or so?  How do we get to the ones that matter further down the list?
