'Item' and Options in Shopping Cart

I have two queries re the information displayed to customers in the Shopping Cart and Checkout.

1. The first column 'Item' is a duplication (for us anyway) of the item name that is displayed in the 'Description'. We would prefer to have our item code displayed under 'Item'. Is this possible and if so how do we go about doing it?

2. I notice there is an Options column. We don't use it. Is there any way to remove it from the display?

Finally we would like these changes to be reflected in the Order Confirmation emails.
