Selective Out of Stock Message

Hi
We have some inventory items that can always be restocked - we would like these to be visible and on sale without an "Out of Stock message" of any kind.

We have other inventory items that are either seasonal, or out of stock and on a long lead time.  For these types of inventory we want an "Out of Stock" message to show.

Has anyone found a way of doing this.
