Getting a Matrix item not to show on the web

Lets say we have flags in red white and blue.  I am low on blue flags but want to order more.  I have some in our physical store but I want to take them offline.  I cant make the item inactive because I need to sell them in the physical store and I want to make a purchase order for them. 

How do I get just blue off the webstore - display in web controls the whole matrix and takes them all off.
