Removing 'sold out' matrix items
There was a post covering this in 2007, but nothing since.

It makes no sense to expose a matrix item option to the consumer, allow them to select it, add it to the cart, only to find out that the option is no longer available. When making the child matrix item "inactive" and Display In Site= "no" it is still available to the consumer.
Is there a solution i have not discovered?
