Questions about implementing gift certificates

We are trying to implement gift certificates and I have a couple questions.

1. Is there a way to keep the recipient from receiving the initial email that in essence says the code is on its way.  We prefer for the recipient to only get one email, the one that has the gift certificate code in it.
2.  Is there a way to automatically bill only gift certificate orders?  We are afraid someone will order an electronic gift certificate during non-working hours and they will be held up on receiving the code, until we bill the sales order.
