Default Shipping On Item Level

This has probably been addressed in other posts but scanning the forum I couldn't find it.  How can I create a script to limit the shipping options for a specific item?  I need a starting point.  Point being we offer classes and they are only held in store.  We want a script to push the customers only shipping option to in-store-pickup.  Any ideas?
