How to change label of Matrix Options in SiteBuilder web store?

I'm trying to see where in Netsuite to change the labels of our Matrix Options in SiteBuilder (For example, "mo_color" needs to change to "Color"). Seems like the only place this "Label" option pops up is in the Matrix Item Setup Assistant, but it doesn't let you change existing labels. I didn't see anywhere in Custom Lists or Custom Item Fields or in the SiteBuilder section where to change this. See attachment, thanks for any help!  I'm willing to change this through suitescript 1.0/2.0 if that's the only way necessary
