Setting up Italian & Spanish subsidiaries

Please could anyone give me some advice on how to set up NetSuite properly to work in Italy and Spain without the need for external accountants? We have not set it up very well and are still trying to force them to comply with UK Gaap and tax laws!
Does anyone have any tips on how to operate these subs in a NetSuite world? E.g.
how can you set up to account for retentions for occasional workers/photographers etc
how can you be compliant with invoice numbering requirements in either country etc
Anything else that you have come across will be very handy!
