Custom Item Template?

Is there anyone out there who could offer some help on customizing our item template?

We know how to move certain things around when it comes to some of the tags for the store display name, detailed description,image, and pricehtml. 

What we need help on is customizing the "addtocarthtml".

There are certain fields in the item master which we added for delivery times and deposit information.  These are what we would like to change the
appearance without affecting all the other option fields that are too numerous to mention.

So the questions is: Can we split up the "addtocarthtml" tag into pieces so we can customize?
