Limiting Child Items Displayed In Webstore?

We are in the process of migrating our webstore to NS. Is there no way to control what child items display in the website? This seems to only be an option at the parent level, much to my surprise. We are clothing company and do not want to display a past season color of an item even though we may still have some inventory on hand. Any help or ideas on this issue would be greatly appreciated.
