Custom hidden transaction item field not showing up in cart

I am working to get some kind of gift wrapping functionality working in our site before we go live and have decided to use the variable price option on inventory items to override the default price with a price + gift wrapping charge. That works fine. What I want to happen also is to pass in a value like: "Item Price / Gift Wrapping: $9.90 / $3.00" so that they understand why the total price is $12.90.

This seems to work fine as long as I don't set the custom field to be hidden in Customization->Transaction Item Fields. Why?
