Customising <NLADDTOCARTOPTIONS>

I am trying to figure out how to customise (at least to a degree) <NLADDTOCARTOPTIONS>. Specifically, I want to place the matrix selector on the same line as the Quantity and Add to Cart button, but it currently spits the HTML out as a row.

I am also wanting to remove the Matrix description from infront of the Select list.

Anyone have any suggestions?
