Un-Enable Matrix Items

We originally were going to use Matrix items but later decide to stay with the regular items with options.

We did not uncheck the Enable Matrix Items box in setup. We then added all of our items.

Problem is that every option we have defined including those NOT associated with the item shows up under the CUSTOM tab on the item records.

This slows down the loading of an item for edit since it brings in all these options into the custom tab.

Question is: Can we uncheck the Enable Matrix box without harming our data. Would this make these options no longer appear on the custom tab?
