Call Off Orders

Hi all
Has anyone worked out how to handle call off order.

I book 1000 widgets on Jan 1st to be called off in uncertain numbers before 31st December.  Pretty obviously I would like to see how much I have left with my supplier at any point in time. 

How do I do that?

All ideas welcome.
