Workflow | Set Field Value from a System Notes 'OLD' value

We wish to track the values whenever we change a Base Price as well as the Purchase Price on an Inventory Item. I created fields to store the old values and was hoping to set the value on each of those based on the System Notes. However, I can't figure out how to do this. I'm not tied to using system notes as long as I can capture the previous values from either of those fields whenever there is a change.

So the scenario would be:

1) Base/Purchase Price changes on the Item Record

2) The two new fields 'Last Base Price' and/or 'Last Purchase Price' would populate with the value of either of those fields before the new pricing was added.
