I think I've got it. It will depend on 'Date of last sale' and the actual date on the most recent Transaction Invoice being one and the same. The Grouping by columns then gives the results some relevant impact.

The Workflow is set to execute On Create, as per second screenshot above. Although I have also ticked 'On view or update' and then tried to Edit my just-recently created Opportunity, to see if the field then became mandatory, but no such luck. There aren't any conditions on the workflow.
