It sounds like just one permission is missing. On one of their roles, you need to go under Permissions / Setup and add the Mobile Device Access permission. Assign it to the role that has the most appropriate permissions for access to other records suitable for mobile access.

Yes, I have tried multiple categories and it happens regardless of which one is chosen. I tried a row using camera and it appeared that it was going to work (select a category and stay on that screen) but before I could save that row, the app crashed.

I found two ways to create invoices in the NS app. From the invoice list, you can create a new one from scratch. You can also open an open sales order and select Bill and create one that way.
