I would have thought this was a default setting but under settings/company/auto generated numbers, you can establish a prefix for each record type. For instance, we use INV before each invoice number and SO before each sales order number.

Price group allows you to set a price level. The price level when you set it up does let you enter a default discount level but if you look at the individual items, the price group will be available under the price matrix to enter a specific price per item.

Sales order forms are linked to GL-impacting forms like Cash Sale or Invoice. So you may have 2 SO forms- one for each. SO are not GL impacting. You dont even have to use a SO but it is required where you may have scheduled billing. We always use a SO, regardless.

If you enable advanced shipping which will allow you to bill your sales orders before you fulfill them. You can either automate this for certain products via script (to automatically create the cash sale without fulfillment) or just manually know which you want to bill or wait for fulfillment.
