As you can see, I was able to get the Item number to show up before the Description in the top table, but I cannot find any indication where the bottom table comes from or how to edit it:

Re: Error when merging customer records
One of the records has a 'represents subsidiary' defined. This makes this record an intercompany entity, which can never be merged with a regular entity.

based on my understanding the only way to create a contract is to create the SO first ,you can try the estimate record to be converted to SO!
you can control the creation of the contract record by the status of the SO , this means that you can create the contract even if the SO is not yet approved and this option available under the contract preferences at the contract creation & validation tab!
another work around you can perform a work flow to not post the SO without creating a contract and specify the terms you want!
