Form Submission Report

Is there a way I can do a form submission report that shows me the count of contacts who has filled out a form for particular values? For example, I’m trying to do a modification of the ootb form submission report, I want the count of email name instead of the layout listed like below. I’ve found that when I remove the email address from the table, the table breaks entirely. Is there a better way to do this?
