How do we use custom string, number, date in BPM Worklist view

When we go to BPM Worklist -> (+) View -> Under Definition -> (+) -> Custom: We can see custom date 1,2 ; Custom Number 1,2 ; Custom String 1,2 .

What is the significance of these fields? Can we add our own fields and map the values, like Legal entity etc for an application shell role. And how to do it if possible
