Why can't I query all attributes for an API?

When using various API Organization, Product, Profiles, and etc.; I am finding that not all values in the payload can be filtered or queried on. Does Oracle Commerce Cloud API's support querying on any element for that API? Also, finding that going second level on querying is hit or miss, for example ItemArray.ItemArray.Element.

I have tried to find documentation on what is query able, limitations, and syntax for more complex queries with no success.

Not sure what data and and examples I could provide to help with this discussion/question.
