Best practice for creating onboarding checklist workflow

We are currently transitioning away from Taleo and using ORC as our talent acquisition platform and also moving to Onboarding in Fusion. I am not a big fan of Fusion's onboarding checklist as I found Taleo's onboarding to be more robust and sophisticated. 

One concern I had was with checklist formatting. For example, in Checklist Templates task, we are creating a main template for Onboarding as Enterprise onboarding step. We are creating a series of tasks within this category. The first task is the Welcome Email that should be triggered after "Move to HR" action and delivered to new hires via email after accepting offer. I am concerned with the format for this email. In the "Notes" section of the Welcome Email task, we are inputting the content directly in the Notes text box. I noticed that you cannot include any images. Is
