Creating new Application Task for Checklist

Is it possible to create new Application Task to use it with Checklist Tasks. For example we want to create a task for the Contracts Admin to update the Employee Contract details. Currently the "Application Task" LOV does not have this option. Also I noticed the list of tasks will differ based on the Performer, for example the Employee can access his/her "Skills and Qualification" however this option is not available in case the Performer is "Area of Responsibility"; we have case where we need the HR Representative to update the Employee's Skills and Qualifications.

Conclusion: Can we maintain the "Application Tasks" by adding/updating the list of Tasks.
